Braised Boneless Pork Chop with Gailan

This dish offers a beautifully curated combination of tender pork chops, vibrant Gai Lan, earthy Portobello mushrooms, and wholesome buckwheat soba noodles. Ingredients

For the Pork Chops & Mushrooms:

  • 2 boneless pork chops
  • 2 Portobello mushroom caps
  • 2 tablespoons neutral oil
  • 1 tablespoon soy sauce
  • 1 tablespoon mirin
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or sugar
  • 1 teaspoon salt

For the Gai Lan:

  • 8 oz Allwell Greens baby Gai Lan (Chinese broccoli)

For the Soba Noodles:

  • 2 bundles of buckwheat soba noodles
  • 1 teaspoon mirin
  • 1 teaspoon sesame oil

For Garnish:

  • Edible herbs and/or flowers to taste (e.g., Bachelor Buttons, marigold petals, cilantro flowers)

Steps to follow

To Make the Pork Chops & Mushrooms:

  1. Prep the Mushrooms:
    • Clean the Portobello mushrooms by brushing off any dirt or debris.
  2. Cook the Mushrooms:
    • Heat 2 tablespoons of neutral oil in a large pan over medium heat.
    • Place the mushroom caps in the pan, cap side down. Cook for about 3 minutes, then flip to the gill side.
    • Continue flipping the mushrooms every few minutes until they begin to soften.
  3. Cook the Pork Chops:
    • While the mushrooms cook, place the pork chops in the same pan.
    • Cook the pork chops for 2-3 minutes on each side, or until they develop some browning and caramelization.
  4. Braise:
    • Once the pork chops are browned, add the soy sauce, mirin, rice vinegar, honey or sugar, and salt to the pan.
    • Cover the pan and allow the pork and mushrooms to braise for about 5 minutes, or until the pork is fully cooked and the mushrooms are tender.
    • Remove the pork chops and mushrooms from the pan, set aside, and slice both into bite-sized pieces when ready to serve.

To Make the Gai Lan:

  1. Steam the Gai Lan:
    • In the same pan with the remaining cooking liquid from the pork, add the Gai Lan.
    • Cover the pan and steam the Gai Lan for about 2 minutes, or until tender.

To Make the Soba Noodles:

  1. Cook the Noodles:
    • Boil water in a pot and cook the soba noodles according to package instructions until tender.
    • Drain the noodles, then toss them with 1 teaspoon of mirin and 1 teaspoon of sesame oil.

To Serve:

  1. Plate the Dish:
    • Place a portion of soba noodles in each bowl.
    • Top with the sliced pork, mushrooms, and a serving of Gai Lan.
    • Garnish with your favorite edible herbs and flowers for an elegant finish.
