Steps to follow
To Make the Pork Chops & Mushrooms:
- Prep the Mushrooms:
- Clean the Portobello mushrooms by brushing off any dirt or debris.
- Cook the Mushrooms:
- Heat 2 tablespoons of neutral oil in a large pan over medium heat.
- Place the mushroom caps in the pan, cap side down. Cook for about 3 minutes, then flip to the gill side.
- Continue flipping the mushrooms every few minutes until they begin to soften.
- Cook the Pork Chops:
- While the mushrooms cook, place the pork chops in the same pan.
- Cook the pork chops for 2-3 minutes on each side, or until they develop some browning and caramelization.
- Braise:
- Once the pork chops are browned, add the soy sauce, mirin, rice vinegar, honey or sugar, and salt to the pan.
- Cover the pan and allow the pork and mushrooms to braise for about 5 minutes, or until the pork is fully cooked and the mushrooms are tender.
- Remove the pork chops and mushrooms from the pan, set aside, and slice both into bite-sized pieces when ready to serve.
To Make the Gai Lan:
- Steam the Gai Lan:
- In the same pan with the remaining cooking liquid from the pork, add the Gai Lan.
- Cover the pan and steam the Gai Lan for about 2 minutes, or until tender.
To Make the Soba Noodles:
- Cook the Noodles:
- Boil water in a pot and cook the soba noodles according to package instructions until tender.
- Drain the noodles, then toss them with 1 teaspoon of mirin and 1 teaspoon of sesame oil.
To Serve:
- Plate the Dish:
- Place a portion of soba noodles in each bowl.
- Top with the sliced pork, mushrooms, and a serving of Gai Lan.
- Garnish with your favorite edible herbs and flowers for an elegant finish.
